On this episode of ‘In Char’s Kitchen’ I’m delighted to be joined by Canadian Soprano Amy Wallace ~ we’re whipping up two delicious and doable recipes that are both perfect for entertaining! The gourmet grilled cheese makes for a tasty appetizer/hors d’oeuvres and the chocolate bark is a perfect holiday gift form the kitchen or post festive dinner party nibble.
Mini Gourmet Grilled Cheese with Herbed Butter & Truffle Oil
Turn a classic comfort food into a simple (and to-die-for) holiday (or any day!) appetizer.
½ cup (125 mL) *approx* softened butter – I prefer salted butter
¼ cup (60 mL) chopped mixed fresh herbs (parsley, rosemary & mint) or 2 tsp (10 mL) mixed dried herbs
hefty pinch salt, pepper and ground nutmeg
6 slices of Artisan bread
Sliced Canadian aged cheddar and Brie cheese (*or cheese of choice)
Truffle Oil & liquid honey
Additional chopped fresh herbs for garnish
Stir together butter, chopped mixed herbs, salt, pepper and ground nutmeg. Spread butter mixture evenly on both sides of each slice of bread. Divide cheese evenly on 3 slices of bread and top with remaining bread. Grill sandwiches (*on both sides) in a skillet over medium heat until golden. Remove from heat. Cut into quarters and drizzle evenly with truffle oil, honey and additional chopped fresh herbs. Make 12 pieces.
