There’s nothing worse than coming home from a fun weekend away to a fridge full of wilted produce and spoiled food. Instead, whip up a few ‘delicious & doable’ snacks before you go. The below recipes are simple, nutrient-dense, and perfect for using up what’s already kicking around in your kitchen.
Asian Chicken Veggie Wrap

These wraps were a go-to in our house when Tyler and Colgan were little – the perfect way to use up whatever veggies and/or greens I had lingering in the crisper. Quick mom tip: grab a store-bought rotisserie chicken to save time on prep. And I like to stir a little mayo (about 2 tbsp (30 mL)) into the peanut sauce for extra creaminess.

Carrot Cake Energy ‘Truffles’
Anything carrot cake-ish is my favourite. These good-for-bites may not be slathered in cream cheese frosting – but they sure do hit the spot when you’re craving something sweet.

Ingredients
- ½ cup (125 mL) each of flaked coconut (I like sweetened) and peanuts (or almonds or walnuts)
- ¼ cup (60 mL) large flake rolled oats
- 1 cup (250 mL) grated carrot (wash well, leave skin on)
- 2 tbsp (30 mL) vanilla flavoured protein powder
- 1 tbsp (15 mL) each of ground flaxseed and chia seeds
- 1 tbsp (15 mL) Crosby’s Fancy Molasses (click here for product info)
- ½ tsp (2 mL) vanilla extract
- ½ tsp (2 mL) minced fresh ginger (optional)
- ½ tsp (2 mL) each of ground cinnamon and ground ginger
- ¼ tsp (1 mL) salt
Directions
- Place coconut, peanuts and oats in the bowl of a food processor fitted with a metal blade. Pulse until finely chopped.
- Add remaining ingredients and pulse until mixture is very well combined (scrape down sides of bowl when needed).
- Roll mixture evenly into balls – just a bit smaller than a golf ball (should yield approx 8 ‘truffles’).
- Store in an airtight container in the refrigerator for up to one week (or freeze for up to 3 months).
- Makes 8 truffles. Enjoy!
Chocolate Orange Avocado Mousse

If you’re craving a guilty pleasure (without the guilt!), this avocado mousse will be sure to satisfy your sweet tooth. My recipe is not overly sweet, as I like the rich cocoa and citrus flavour to shine through. If you prefer your mousse sweeter, simply add an additional tablespoon (15 mL) of Crosby’s Fancy Molasses.

Char’s Mixed Herb Garden White Bean Dip

My mixed herb hummus/bean dip is a great way to use up leftover fresh herbs + a good excuse to eat more veggies. Simply chop up a bunch of carrots, peppers, cucumbers and get dipping!! This dip also makes a fab sandwich spread too!
