Seriously, it’s called the simplest supper ever because it is just that! Truth be told, this might be my favourite way to enjoy pasta. Hope you and your gang enjoy this recipe as much as I do!
Ingredients:
- 1 lb (500 g) spaghetti noodles (I like Italpasta Artisan noodles)
- 1/4 cup (60 mL) olive oil *or melted butter
- 3 cloves garlic, minced
- finely grated zest and juice of one lemon
- 1 cup (250 mL) grated Parmesan cheese
- ½ tsp (2 mL) each of salt and chili flakes
- ½ cup (125 mL) each of chopped fresh parsley and torn fresh basil leaves
Garnish:
- additional grated Parmesan, chili flakes, chopped fresh parsley and lemon wedges.
Directions
- Cook pasta according to package directions.
- Drain well and place back into the pot you boiled pasta in and toss with remaining
ingredients. - Divide pasta evenly between bowls and garnish evenly with additional parmesan,
chili flakes, fresh herbs and lemon wedges. - Makes 4 generous servings.
Tip
~ add leftover grilled vegetables to pasta before tossing
~ drizzle each portion with truffle oil for a sinful flavour boost.
