It’s the most wonderful time of the year = Ontario peach season!!
Yes, peaches are fab by the piece, but I also love incorporating this juicy fruit into dishes (both sweet and savoury).
The following peach recipes are simple to prepare and will have you gobbling up that basket of fuzzy fruit in no time. Enjoy!!
Peach Muesli made with Gay Lea Nordica Cottage Cheese
This recipe makes for a quick, satisfying and budget friendly breakfast the whole family can enjoy.
Ingredients
- 1 cup (250 mL) large flake oats
- 1 tbsp (15 mL) each of ground flaxseed, chia seeds and hemp seeds
- ½ cup (125 mL) raisins (or dried cranberries)
- 1 cup (250 mL) Gay Lea Nordica 4% Creamed Cottage Cheese (click here for more info)
- ¾ cup (175 mL) orange juice (or almond milk)
- 2 tbsp (30 mL) maple syrup (or brown sugar)
- 2 tsp (10 mL) pure vanilla extract
- ½ tsp (2 mL) each of ground cinnamon and ground ginger
- 3 ripe Ontario peaches; well washed, seed removed and chopped
- ¼ cup (60 mL) green pumpkin seeds
Instructions
Place all ingredients in a large mixing bowl and stir to combine. Refrigerate for 4 hours or overnight.
Yields 4 cups (1 L). Makes 8, ½ cup (125 mL) servings.
