Up your weeknight meal game with a creamy & decadent pasta dish that can be whipped up in about 30 minutes. Dinnertime done right!
Holiday entertaining tip: Hosting a dinner party? For a festive flare ~ garnish each guests portion with seeds of a pomegranate.
Ingredients
- 3 cups (750 mL) Italpasta Artisan Gemelli (click here for product info), or pasta shape of choice
- 2 tbsp (30 mL) butter
- 1 onion, chopped
- 3 cups (750 mL) thinly sliced portobello mushrooms, wiped clean (cremini and/or button mushroom can be used too – or a mix) – click here to learn more about the health benefits of Canadian Mushrooms.
- 2 tsp (10 mL) dried thyme leaves
- ½ tsp (2 mL) salt
- ¼ tsp (1 mL) each of pepper and ground nutmeg
- ½ cup (125 mL) white wine (or chicken stock)
- 1 cup (250 mL) 35% cream
- ¾ cup (175 mL) crumbled gorgonzola (approx 4 oz/120 g)
- ¾ cup (175 mL) sliced sundried tomatoes, patted slightly dry
- ½ cup (125 mL) grated Parmesan cheese
- ½ cup (125 mL) chopped fresh parsley
- 2 tbsp (30 mL) roughly chopped fresh rosemary
- 3 cloves garlic, minced
- Garnish: additional grated Parmesan cheese and chopped fresh parsley.
Directions
- Cook pasta according to package directions. Drain well. Keep pasta in the colander and toss with a small splash of vegetable oil (about 1 tsp (5 mL)). Set aside while making sauce.
- Over medium heat, heat butter in the same pot you cooked the pasta in. Cook onion and mushrooms for about 3 to 5 minutes, until soft.
- Add dried herbs and spices and cook, stirring, until fragrant, about 30 seconds. Add wine, and stir, while scraping any bits from the bottom of the pan.
- Add cream and bring to a gentle boil. Stir in the remaining ingredients and cook for about 1 to 2 minutes until the cheese has melted slightly.
- Stir in reserved pasta. Remove from heat.
- Divide pasta evenly between serving dishes. Garnish evenly with additional Parmesan cheese and chopped fresh parsley. Makes about 6 servings.
Delicious & Doable Tips:
~ not a fan of blue cheese? Use cubed brie cheese instead.
~ add chopped cooked chicken (about 1 ½ cups (375 mL) to the dish for added protein.
