Asian Chicken Veggie Wrap

These wraps were a go-to in our home when Tyler and Colgan were growing up – not only were they delicious, but they were also a perfect excuse to use up whatever veggies and/or greens I had lingering in the crisper. Quick mom tip: Grab a store-bought rotisserie chicken to save time on prep. And I like to stir a little mayo (about 2 tbsp (30 mL)) into the peanut sauce for extra creaminess.

Char’s Curried Chicken Pasta Salad

When Tyler and Colgan were teenagers, there was always a pasta salad in the fridge – ready for after school, before basketball practice, or one of those late-night snack attacks (if you have teenage boys…I know you know!! Ha!). This one was a go-to in our house, and I’d often toss in diced apple and a bit of fresh cilantro for extra crunch, nutrients, and flavour.
