In Char’s Kitchen Episode #6 ~ Special Guest Yvonne Heath

On this episode of ‘In Char’s Kitchen’ I’m joined by my amazing friend, mother, wife, author, Ted X speaker (video below), talk show host and founder of the #IJustShowedUp movement; Yvonne Heath. After a 27 year nursing career and working in many departments, from emergency to chemotherapy, palliative care and hospice  ​– Yvonne now travels the globe educating (the public) ​communities about (grief) ​how to prepare for grief and life’s challenges.

Curried Cauliflower & Arugula Salad

Looking for a delicious, nutritious and showstopping holiday side dish? This salad is as flavourful as it is beautiful.

Dressing

3 tbsp (45 mL) prepared mango chutney

1 tsp (5 mL) balsamic vinegar

½ tsp (2 mL) each; minced fresh ginger, minced fresh garlic and finely grated orange zest

Salad

1 medium head of cauliflower cut into florets *should equal about 6 cups (1.5 L)

2 tbsp (30 mL) vegetable oil

1 tbsp (15 mL) curry powder

2 tsp (10 mL) ground turmeric

½ tsp (2 mL) each; ground cinnamon and salt

1/4 tsp (1 mL) ground cardamom and chili flakes

4 cups (1 L) lightly packed baby arugula leaves

1/2 cup (125 mL) each; cashews and dried cherries

1/3 cup (75 mL) roughly chopped fresh mint

Whisk together dressing ingredients and set aside. Preheat oven to 400 F (200 C). Toss cauliflower florets with oil, curry powder, turmeric, cinnamon, salt, cardamom and chili flakes. Place on a large baking sheet lined with parchment paper. Bake for 45 minutes, tossing every 15 minutes. Remove from oven and cool. When ready to serve, toss cauliflower with arugula, cashews, dried cherries, mint and reserved dressing. Makes about 6 cups (1.5 L). Serves 8 as a side dish.
