It just seems like yesterday I was gearing my gang up for back-to-school, now my boys are 23 & 25?!
Not sure how that happened, but here we are. If you’re a parent, you know how time literally flies…insert sad crying face emoji!
I know from lived experience how hectic and, at times, overwhelming this time of year can be….
especially when it comes to feeding a busy family.
Although I don’t have all the answers, I do have a few recipes that were go-to’s when my gang was heading back to school. In true ‘Char-fashion’ dishes use mostly pantry staples items, taste amazing, and use fairly simple cooking methods.

Char’s Tex-Mex Rice Salad
~ perfect gluten free, plant protein packed and veggie loaded lunch grub, after school snack or weeknight dinner side. Bonus: good excuse to use up all those garden ripe tomatoes.

Deconstructed Cabbage Roll Pasta Bake
~ pasta dishes were my saving grace when Tyler & Colgan were growing up. This pasta bake was a favourite in our home, all the fab flavours of cabbage rolls without the fuss. You’re welcome!

Chocolate Tahini Hummus
