Need an excuse to use up random fresh herbs? This is the recipe for you and your gang! Sunday brunch with the grandkids or a weeknight supper at its best. Seriously, so darn good!

Get Up & Go Morning Muesli

If you’re looking for a fabulous and flavourful breakfast/brunch dish to prepare with young grandchildren, this is the perfect recipe. Have grandkids measure out all of the ingredients and place in a large mixing bowl (order does not matter *bonus if your grandkids are toddlers), then stir to combine. It does not get much easier and/or delicious than this delicious and healthy make-ahead breakfast dish.
When my children (now 20 & 21) were young they often munched on this as an afternoon snack.

Ingredients

  • 1 cup (250 mL) large flake oats
  • ½ cup (125 mL) dried cranberries
  • 1/4 cup (60 mL) each of green pumpkin seeds and shelled sunflower seeds
  • 1 tbsp (15 mL) each of ground flaxseed, chia seeds and hemp seeds
  • 1 cup (250 mL) plain Greek style yogurt
  • finely grated zest of one orange
  • ¾ cup (175 mL) orange juice
  • 2 tbsp (30 mL) Canadian maple syrup *or to taste
  • 2 tsp (10 mL) pure vanilla extract
  • ½ tsp (2 mL) ground cinnamon
  • ¼ tsp (1 mL) each of ground ginger and salt
  • 2 small Ontario apples; well washed, cored and finely diced *leave skin on for added fibre

Directions

  1. Place all ingredients in a large mixing bowl and stir to combine.
  2. Refrigerate for 4 hours or overnight.
  3. Makes 4 cups (1 L).
