‘In Char’s Kitchen’ Season 2 ~ Episode #3: Sweet & Savoury Turkey Burgers and Jicama Slaw

I’ve mentioned countless times on ‘In Char’s Kitchen’ that my all time fave food/meal is a juicy burger paired with a crunchy slaw! Take your burger and slaw game to new heights with the below recipes – YUM!!

Char’s Sweet & Savoury Turkey Burger

I developed this recipe about 10 years ago (for a fitness publication I wrote recipes for) – readers loved it and I hope you will too! Swap out fresh blueberries for finely diced apples = so good!

2 lbs (900 g) lean ground turkey

1 cup (250 mL) fresh blueberries *or ½ cup (125 mL) dried blueberries

½ cup (125 mL) chopped green onions

2 tbsp (30 mL) prepared horseradish

1 tbsp (15 mL) dried tarragon leaves

2 tsp (10 mL) minced garlic *or to taste

½ tsp (2 mL) salt

¼ tsp (1 mL) pepper

4 hamburger buns and garnishes of choice.

Pre-heat grill to medium-high. Using clean hands – combine all burger ingredients in a large bowl and form form into 4 jumbo (*or 6 smaller size) patties. Place burgers on clean, pre-heated grill. Turn heat down to medium and grill for about 5 minutes per side (or until internal temperature reads:165°F (75°C)). Remove from grill and let stand for about 5 minutes. Place burgers on bun and top with garnishes of choice. Makes 4 jumbo (*or 6 smaller) patties. 

Jicama & Mango Slaw with Honey Lime Dressing 

Simple, fresh and delicious. Jicama (in my opinion) is like a cross between an apple/pear and a potato – it can be consumed raw (I prefer it raw) added to any salad, slaw or add to a veggie tray.

Dressing 

1 tbsp (15 mL) liquid honey

2 tsp (10 mL) cider vinegar 

zest and juice of one lime

hefty pinch salt and pepper

Pinch chili flakes *optional*

Quality olive oil

Salad

1 small jicama (or half large), peeled and cut in thin strips

2 celery stalks, cut on bias

1 mango, peeled and cut in thin strips (*or diced)

½ cup (125 mL) chopped green onion

¼ cup (60 mL) torn mint leaves

Whisk together dressing ingredients and toss with salad ingredients. Makes about 6 cups (1.5).
