Char’s Carrot Cake Energy Truffles

If you love carrots (and carrot cake) as much as I do…
no doubt you love these good-for-you and simple to whip up ‘truffles’.

Ingredients

  • ½ cup (125 mL) each of flaked sweetened coconut and peanuts
  • ¼ cup (60 mL) large flake rolled oats
  • 1 cup (250 mL) grated carrot
  • 3 tbsp (45 mL) vanilla flavoured protein powder
  • 2 tbsp (30 mL) Char’s Magic Seed Mix (see recipe at bottom of post)
  • 1 tbsp (15 mL) molasses (or honey)
  • ½ tsp (2 mL) pure vanilla extract
  • ½ tsp (2 mL) minced fresh ginger (optional)
  • ½ tsp (2 mL) each of ground cinnamon and ground ginger
  • ¼ tsp (1 mL) salt

Directions

  1. Place coconut, peanuts and oats in the bowl of a food processor fitted with a metal blade. Pulse until finely chopped.
  2. Add remaining ingredients and pulse until mixture is very well combined (scrape down sides of bowl when needed).
  3. Roll mixture evenly into balls – just a bit smaller than a golf ball (should yield approx 8 ‘truffles’).
  4. Store in an airtight container in the refrigerator for up to one week (or freeze for up to 3 months). Makes 8 truffles. Enjoy!!

Char’s Magic Seed Mix:

Place equal parts chia, ground flax and hemp seeds in a large mason jar and shake to combine. Use in baking, in smoothies or sprinkle on salads for a boost of: plant protein, fibre and healthy fats.
