What To Do With Rotisserie Chicken ~ as seen on CTV morning Live Ottawa

Store bought rotisserie chicken has saved my behind many times (especially when Tyler & Colgan (now 21 & 23) were young. Yes, even as a chef & cookbook author, I opted for the $15 grab-and-go protein option more times than I can count.

If you’re looking to keep mealtime quick & easy – the following recipes are ‘delicious & doable’ ways to up your store-bought-chicken-game. No doubt you and your gang will devour these fast & flavourful dishes. Enjoy!

Curried Chicken Pasta Salad

This pasta salad is loaded with flavour & textures and is a perfect canvas for chopped cooked rotisserie chicken.

Crunchy Chicken Waldorf Salad

Nestle this salad between two pieces of sourdough (or bread of choice), or, serve on a bed of greens – for a nutrient dense and protein rich meal.

Ingredients

  • 2 cups (500 mL) chopped cooked rotisserie chicken (dark and white meat)
  • ½ fennel bulb, cored and finely diced OR 1 cup (250 mL) finely diced celery
  • 1 apple, cored and diced (leave skin on)
  • ½ cup (125 mL) very finely diced red onion (or chopped green onion)
  • ½ cup (125 mL) roughly chopped walnuts
  • ⅓ cup (75 mL) prepared mayonnaise
  • ¼ cup (60 mL) chopped fresh mint
  • 1 tbsp (15 mL) each of Dijon mustard and lemon juice
  • ½ tsp (2 mL) salt
  • ¼ tsp (1 mL) pepper

Directions

  1. Stir together all ingredients until well combined.
  2. Cover and refrigerate until ready to serve.
  3. Stir well before serving.
  4. Makes about 4 cups (1 L).

Delicious & Doable Tips:

~ add ½ cup (125 mL) fresh blueberries to salad
~ add ¼ cup (60 mL) shelled sunflower seeds to salad before mixing
