warm & cozy gingerbread post workout sip: 1 cup ( warm & cozy gingerbread post workout sip:

1 cup (250 mL) unsweetened almond milk 
1/4 cup (60 mL) water
1 tbsp (15 mL) molasses 
1 tsp (5 mL) ground ginger
1/2 tsp (2 mL) ground cinnamon 
1/4 tsp (1 mL) ground cardamom & ground nutmeg
tiny splash of vanilla extract 
1 scoop (about 15 mL) unflavoured collagen powder 

Place all ingredients in a mason jar and shake until well incorporated (or whisk together) * I don’t drink alcohol so shaking in a mason jar makes me feel like I’m a bartender 😁🍹🥃😆 *
Place in a small pot and heat until desired temperature. So darn yummy. Enjoy!!

clip is from last week’s Laugh, Lunch & Learn at @thecreativecook.ca - my savoury bread pudding was literally devoured by students!! Delicious & oh-so Doable done right!!

This recipe makes a fab Sunday (or Xmas day🎄) brunch OR weeknight supper served with mixed greens (or steamed veg) - great way to use up: cheese, herbs or meat. Toss with egg/cream mixture and ta-da, a cozy casserole is ready for your gang!

Ingredients:

10 eggs
1 1/2 cups (375 mL) 35% whipping cream
1 tbsp (15 mL) Dijon mustard
1 tsp (5 mL) dried sage leaves (or 1/4 tsp (1 mL) ground sage)
1⁄2 tsp (2 mL) each of salt, pepper, and ground nutmeg
8 cups (2 L) cubed day-old bread *I like to use a combo of @bigriverbakingco croissants & sourdough* 
1 cup (250 mL) grated aged cheddar cheese, divided
1⁄2 cup (125 mL) roughly chopped green onions
1⁄2 cup (125 mL) chopped fresh parsley, divided
1⁄2 cup (125 mL) dried cranberries
1/3 cup (75 mL) roughly chopped fresh rosemary 
4 oz (120 g) diced Brie cheese

Directions:

1. Preheat the oven to 350°F (180°C).

2. Whisk together eggs, cream, Dijon, and herbs & spices until well combined. (I like to
use my food processor - this helps aerate the egg mixture and gives the dish a soufflé texture).

3. Place cubed bread, 1⁄2 cup (125 mL) grated cheese, onions, 1⁄4 cup (60 mL) parsley, dried cranberries, rosemary and brie in a large bowl, and toss with egg mixture.

4. Place mixture in a well-greased 9 x 13-inch casserole dish (may look a bit sparse but will soufflé up once baked). Sprinkle remaining 1⁄2 cup (125 mL) grated cheese evenly on top.

5. Bake in the centre of the oven for about 30 minutes or until golden and eggs have set.
Remove from the oven and cool slightly. Garnish with remaining chopped fresh parsley.
Makes 6 servings.

Delicious & Doable Tips: 

● blue cheese fan? Use crumbled Gorgonzola instead of Brie.
● Add 1 cup (250 mL) chopped cooked bacon to mixture before baking.

what to do with a sad looking rotisserie chicken😆🍗

@melissalambtv & I are to the rescue (in the fab new @deslauriercustomcabinets kitchen) with: Char’s Crunchy Waldorf Salad - so good. so easy. so crunchy. and loaded with textures & flavour (the addition of fennel takes is chicken salad to whole new licorice heights!! (recipe below).

Crunchy Waldorf Salad

Nestle this salad between two pieces of pumpernickel (or bread of choice), or, serve on a bed of greens for a nutrient dense, and protein rich meal.

Ingredients

2 cups (500 mL) chopped cooked rotisserie chicken (dark and white meat)
½ fennel bulb, cored and finely diced OR 1 cup (250 mL) finely diced celery
1 apple, cored and diced (leave skin on)
½ cup (125 mL) very finely diced red onion (or chopped green onion)
½ cup (125 mL) roughly chopped walnuts
⅓ cup (75 mL) prepared mayonnaise
¼ cup (60 mL) chopped fresh mint
1 tbsp (15 mL) each of Dijon mustard and lemon juice
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper

Directions:

1. Stir together all ingredients until well combined.
2. Cover and refrigerate until ready to serve.
3. Stir well before serving.
Makes about 4 cups (1 L).

Delicious & Doable Tips:

~ add ½ cup (125 mL) fresh blueberries to salad.
~ add ¼ cup (60 mL) shelled sunflower seeds to salad before mixing.

Pumpkin Muffins with Coconut Crunch Topping = the Pumpkin Muffins with Coconut Crunch Topping = the muffin top you didn’t know you needed…
or wanted 😆🧁🎃🍁 

Coconut Crunch Topping: 

½ cup (125 mL) large flake toasted coconut
¼ cup (60 mL) each of flour and brown sugar
1 tbsp (15 mL) pumpkin seeds
2 tbsp (30 mL) softened butter
½ tsp (2 mL) each of ground cinnamon and ground ginger
pinch salt

~ Using your finger tips combine all ingredients until well combined. Set aside while making batter.

Pumpkin Muffin Batter: 

½ cup (125 mL) milk + 1/2 tsp (2 mL) white vinegar (or lemon juice)
1 1/4 cup (310 mL) white sugar
¾ cup (175 mL) vegetable oil (*you can use melted butter if you prefer)
2 eggs
2 tsp (10 mL) vanilla extract
1 3/4 cups (425 mL) all-purpose flour
2 tbsp (30 mL) each of ground flax seeds and chia seeds (optional)
1 tbsp (15 mL) pumpkin spice (store bought or homemade. Homemade pumpkin spice recipe pinned to top of my insta)
½ tsp (2 mL) salt
1 tsp (5 mL) baking soda
1 1/2 cups (375 mL) pure pumpkin puree

Directions

1. Preheat the oven to 350 F (180 C).

2. Stir together milk and vinegar. Set aside.
Beat together sugar, oil, eggs and vanilla.

3. Stir in dry ingredients until just combined.

4. Stir in pumpkin puree and reserved milk until evenly combined.

5. Divide batter evenly between 12 muffins tins lined with muffin cups (each tin will be quite full)

6. Divide topping mixture evenly between muffin tops pressing slightly on to batter.

7. Bake in center of the preheated oven for about 30 minutes (until a cake tester comes out clean).
Makes 12 muffins. Enjoy!!
