Roasted Carrot & Parsnip ‘Fries’
A simple and nutritious side dish.
1 lbs. (500 g) carrots, well washed *skin left on
1 lbs. (500 g) parsnips, well washed *skin left on
1 tbsp (15 mL) vegetable oil
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
2 tsp (10 mL) melted butter or quality olive oil
1 tsp (5 mL) liquid honey
½ tsp (2 mL) each: minced garlic and minced fresh ginger
1 tbsp (15 mL) chopped fresh parsley
Preheat oven to 400 F (200 C). Cut carrots and parsnips in ‘French fry’ thick sticks. Toss with oil, salt and pepper. Place on a large baking sheet (or two small baking sheets) lined with parchment paper. Bake in center of oven for about 40 minutes, tossing once or twice during cooking.
Remove from oven. Cool for a few minutes. Stir together: butter, honey, garlic, ginger and parsley. Toss with carrots & parsnips. Serves 6 (as a side dish).
