If you’re in a ‘what’s for lunch/dinnertime…?!?’ jam – a store bought rotisserie chicken can be your best friend. With a few pantry staple items and a bit of chopping, you can whip up a couple of delicious and doable dishes that your whole gang will gobble up! Click here to watch my segment on Rogers IN Studio.
Fruit and Nut Chicken Salad
Kick up your chicken salad game with a few pantry staple items. I love the sweet and savoury flavour combo of this salad.
1 (2lb.) store bought cooked rotisserie chicken
1 apple, chopped (well washed and skin left on)
1/2 cup (125 mL) roughly chopped walnuts
½ cup (125 mL) California Raisins (click here for more sweet and savoury recipes using California Raisins)
⅓ cup (75 mL) each; chopped green onion and chopped celery
¼ cup (60 mL) each; chopped fresh mint and chopped fresh tarragon (if you can’t find fresh tarragon – you can use 2 tsp (10 mL) dried tarragon leaves).
3/4 cup (175 mL) mayonnaise (or plain Greek style yogurt)
1 tbsp (15 mL) grainy Dijon mustard
zest and juice of one lemon
½ tsp (2 mL) salt
¼ tsp (1 mL) pepper
Remove chicken from bones (I eat most of the skin too!) and chop in bite size pieces. Place all salad ingredients in a large mixing bowl. Stir together dressing ingredients and toss with salad until well combined. Makes about 6 cups (1.5 L).
Serve on a bed of greens, on a massive ciabatta bun or in a lettuce wrap. Enjoy!
