Nothing screams warm weather eating like a juicy burger off the grill – served with a side of crunchy coleslaw of course!! Cabbage is a great veg to have on hand: it holds up well (stored in a cool dark place), is economical and packed with nutrients!! DYK? Cabbage is an excellent source of Vitamin K, packed with Vitamin C and contains only 22 calories per cup (250 mL) – bring on bikini season…haha!!

Char’s Juicy Beef Burgers and Crunchy Lime Slaw

Char’s Cheddar Stuffed Beef Burgers

2.5 lbs. medium ground Canadian beef 

3 tbsp (45 mL) roughly chopped fresh rosemary

2 tbsp (30 mL) dried parsley leaves

2 tbsp (30 mL) grainy Dijon mustard

2 tsp (10 mL) minced garlic *or to taste

3/4 tsp (3 mL) salt

1/2 tsp (2 mL) fresh pepper

6 cubes of Canadian cheddar cheese (approx 1 oz each)

Pre-heat grill to medium-high. Using clean hands – combine all ingredients in a large bowl and form form into 6 even size patties. Using your thumb, make a well in middle of each burger. Place one piece of cheese in each burger and press meat back over to cover cheese. Place burgers on clean, pre-heated grill. Turn heat down to medium and grill for about 5 minutes per side (or until internal temperature reads:160°F (71°C)). Remove from grill. Let stand for about 5 minutes. Place burgers on bun and garnish. Makes 6 patties.

Char’s Crunchy Creamy Lime Slaw

1 medium head of red cabbage, core removed and very thinly sliced (*or 8 cups (approx) prepared shredded cabbage

1 apple, well washed and chopped (*leave skin on) 

1 carrot, grated (*approx 1 cup (250 mL) grated)

½ cup (125 mL) roughly chopped green onion

⅓ cup (75 mL) roughly chopped fresh mint

⅓ cup (75 mL) dried cranberries 

3 tbsp (45 mL) each; green pumpkin seeds and shelled sunflower seeds  


¾ cup (175 mL) prepared mayonnaise (*or vegan mayonnaise)

1 tbsp (15 mL) cider vinegar

1 tbsp (15 mL) granulated sugar

zest and juice of one lime

½ tsp (2 mL) each; salt and pepper 

Place slaw ingredients in a large mixing bowl. Whisk together dressing ingredients and toss with slaw. Cover and refrigerate for one hour – or up to two days. Toss well before serving. Makes about 8 cups (2 L).
