Char’s Herb Garden Lentil Dip ~ click here for the recipe. *note: during the summer months I add (approx) 1 cup (250 mL) chopped mixed herbs to dip. A combo of: parsley, mint, basil, chives and dill. It’s like a fresh-summer-flavour-explosion in every bite!

Char’s Summer Berry and Ginger Cheesecake Jars
2 cups (500 mL) halved fresh strawberries
1/2 cup (125 mL) fresh blueberries
1 cup (250 mL) mascarpone cheese, softened (*or softened brick style cream cheese)
1/2 cup (125 mL) each; full fat sour cream (*or Greek yogurt) and sweetened condensed milk
1 tsp (5 mL) vanilla extract
1/4 tsp (1 mL) salt
1 cup (250 mL) crushed gingersnap cookie crumbs (*or Graham cracker crumbs)
2 tbsp (30 mL) finely diced candied ginger
Place fruit in bowl of food processor fitted with a metal blade. Pulse until roughly chopped. Add remaining ingredients (except for cookie crumbs and candied ginger). Pulse until just combined – scrape down sides of bowl if needed. Divide half of fruit/cheese mixture evenly between 4, 1 cup (250 mL) mason jars. Divide gingersnap cookie crumbs evenly on top of fruit/cheese mixture and top evenly with remaining fruit/cheese mixture. Garnish each jar evenly with candied ginger. Cover jars and store in the refrigerator for up to 2 days.
