Char’s Homemade Pesto Pasta with Roasted Carrots

Homemade pesto is a cinch to make. This pesto also makes a great “sauce” for grilled fish or slather on a sandwich instead of mayo!

1/2 cup (125 mL) nuts (*peanuts, almonds, cashews OR seeds: shelled sunflower or pumpkin seeds) * I often use a combo: 1/4 cup (60 mL) peanuts and 1/4 cup (1/4 cup) shelled sunflower seeds

2 cloves of garlic

4 cups (1 L) packed baby spinach 

¼ cup (60 mL) finely grated Parmesan Cheese

hefty pinch: salt, chili flakes and ground nutmeg  

1/4 cup (60 mL) olive oil 

zest and juice of one lemon

3 cups (750 mL) dry rotini pasta (*or pasta shape of choice)

Place nuts/seeds and garlic in a food processor fitted with a metal blade. Pulse until finely chopped. Add spinach, cheese, salt, chili flakes and nutmeg. Pulse until chopped. With motor running, drizzle in oil, lemon zest and lemon juice. Scrape down sides of bowl when needed. Cover and refrigerate for up to 3 days. Makes about 3/4 cup (175 mL). Cook pasta according to package directions. Toss warm cooked pasta with pesto. Makes about 4 cups (1 L). 

Roasted Carrots

2 lbs carrots, well washed and chopped into thick match sticks (*refer to FB video)

2 tsp (10 mL) vegetable oil

hefty pinch salt and pepper

Preheat oven to 425 F (220 C). Toss carrots with oil, salt and pepper. Place carrots on a large baking sheet (*or two small/medium baking sheets) lined with parchment paper – be sure not to overcrowd pan (*refer to FB live video). Place in centre of oven and roast for approx 40 minutes – using a thin spatula, flip carrots every 10 to 15 minutes until evenly roasted. Serve as a side dish or add to pesto pasta. Enjoy!
