½ cup (125 mL) ketchup

¼ cup (60 mL) each: fish sauce, hoisin sauce and fresh lime juice

3 tbsp (45 mL) natural peanut butter

1 tbsp (15 mL) each: hot sauce and sesame oil

1 tbsp (15 mL) minced fresh ginger

2 cloves minced garlic *or to taste

Pinch hot pepper flakes *optional

Noodles and Veggies

1 (250 g) package wide rice noodles

4 cups (1 L) broccoli florets 

2 small carrots, thinly sliced

1 red pepper, sliced


½ cup (125 mL) roughly chopped peanuts

⅓ cup (75 mL) chopped fresh cilantro

¼ cup (60 mL) each: chopped fresh green onions and mint

Lime wedges

Whisk together sauce ingredients. Bring to a boil and remove from heat. Bring a large pot of water to boil. Turn heat off and add noodles (do not stir). Let stand for about 10 minutes. In the last 2 minutes of soaking, add broccoli, carrots and peppers. Drain well. Place noodles and vegetables back in large pot. Immediately add sauce and toss to coat. Divide noodles evenly between serving dishes and garnish evenly with peanuts, cilantro, green onions, mint and lime wedges. Serves 6 to 8.
