Ambrosia Salad Smoothie

Turn a retro salad into a good-for-you morning sip!!

Garnish: melted white chocolate and sprinkles and/or toasted coconut. Dip rim of smoothie glass in melted chocolate and then in sprinkles and/or toasted coconut. Chill glasses until ready to use.

1 orange peeled and roughly chopped, frozen

1/2 cup (125 mL) chopped pineapple, frozen

1/2 cup (125 mL) Gay Lea Smooth Cottage Cheese

1 cup (250 mL) milk of choice (*regular, nut milk or coconut milk)

2 tsp (10 mL) Canadian Maple Syrup

1/2 tsp (2 mL) vanilla extract

Place all ingredients in blender and pulse until smooth. Divide shake evenly between glasses. Top with Gay Lea Toasted Marshmallow Whipped Cream and sprinkles or toasted coconut. Makes about 2 cups (500 mL).

Gay Lea Toasted Marshmallow Whipped Cream – a perfect topper for an Ambrosia Smoothie!! Also fantastic on chocolate ice cream with a sprinkle of Graham cracker crumbs for a no-camp-fire-requires s’mores sweet treat!!

Aged Cheddar & Raspberry Monte Cristo

Monte Cristo is traditionally made with ham and cheese – and then dipped in an egg batter. I’ve put an #InCharsKitchen twist on this tasty dish: raspberry jam and aged cheddar!! I’ve added dried sage leaves and ground nutmeg to my egg mixture for an extra umph of flavour!! Simple, delicious and doable!!

3 eggs + 1 tsp (5 mL) dried sage leaves + 1/4 tsp (1 mL) each; ground nutmeg, salt and pepper *whisk together all ingredients until well combined. **note: if using ground sage – only use 1/4 tsp (1 mL).

sliced quality aged Canadian cheddar

quality raspberry preserve or jam (about 2 tbsp (30 mL)

4 slices of bread of choice (*I like an egg bread)

Pre-heat griddle to medium heat. Divide cheese and raspberry preserve evenly between 2 slices of bread. Top with remaining slices of bread. Dip each ‘sandwich’ in egg mixture until evenly coated allowing bred to adsorb egg mixture. Place sandwiches on well-greased pre-heated grill. Grill for approx 2 minutes per side – until sandwiches are brown on both sides. Remove from griddle and cool slightly. Garnish with icing sugar (optional). Makes two sandwiches. Recipes doubles or triples easily.
